Nakahara liquor shop owner Chitosi Nakahara says he got the idea of brewing a liquor using milk when he heard of a milk glut due to falling consumption rates in the country, in one case dumping 900 tonnes of it, so says the Japan Dairy Association.
The Hokkaido brewer calls the new concoction Bilk, as it is a beer containing 30% milk, using a process very similar to brewing beer. It doesn't taste or look much different from regular beer, other than a slight milky aroma.
Bilk can only be purchased by mail order or from two local shops in Japan, and isn't currently in stock because of all the recent attention in the media. He also sells potato beer, a major Hokkaido product.
